Growing under the curious gaze of many, The Artisan Farmer on the Pacific Highway at Nabiac is re-routing its fresh produce production straight to the public due to the unforeseen challenges presented by the COVID pandemic.

"We have endured numerous delays sourcing building materials and tradesman to complete the building and landscaping. We have also experienced shipping delays with our equipment being sourced from Europe, USA, and New Zealand. But we are not taking any shortcuts. When we open it will be the facility we have always envisaged," owner Peter Doyle said, referring to the all-encompassing café, bakery, deli, retail business and event venue being built on the corner of Woosters Lane.
With ovens stuck in Singapore and chrome toilet fittings in transit, Doyle is philosophical about the unexpected delays COVID has wrought.
"It was always a long-term project involving building the Wagyu breeding herd, identifying the genetics and specialised nutritional programs to guarantee quality food, and growing a market garden based on organic principles for the 'paddock to plate and bag' experience."
Undeterred by the opening date which has been quietly and repeatedly pushed back, he is optimistically looking forward to opening in "about four months time. We will be looking to fill numerous roles including bakers, butchers, café and bar staff."
Brought on for the project in preparation of an earlier opening, the delays mean chefs David White, Michael McMahon and the horticulture and nutrition team of Tim and Kirrily Hill and Joel Thompson have had to temporarily re-focus their attention to an interim solution as rows of fresh produce are ready for consumption.
"We want the community to enjoy the fruits of their labour, fresh in season!" Doyle said.
Cue The Artisan Farmer's regular Friday Farm Gate stall, selling an array of vegetables, flowers, pickles, preserves, and Doyle's honey harvested by Manning Valley Industries. Chefs David and Michael have already preserved an array of the bursting produce, thanks to the Nabiac Community Hall kitchen.
"It is not quite what they were expecting when they signed up, however they have rolled up their sleeves and bought into the concept and team culture of the business. We are all enjoying the journey together."
The Friday Farm Gate Produce Stall will be open every Friday from January 14 between 8am and 4pm (school holidays) at "The Overflow", the rustic shed beside The Artisan Farmer's main building on the corner of the Pacific Highway and Woosters Lane, Nabiac.
