Westpac Rescue Helicopter air crewman Jamie Yeo said the trio and their dog spent the night in freezing conditions at Rouchel, west of the Barrington Tops, after becoming lost during a hike.
Mr Yeo said the helicopter winched a paramedic down to the hikers late on Saturday night.
The paramedic spent the night with them before the helicopter retrieved the group on Sunday morning.
Two men, including one elderly man, were uninjured but were suffering from hypothermia.
But Mr Yeo said the paramedic took good care of the hikers before their rescue.
“He provided warmth and snacks for them to eat until the helicopter could get back to them at first light this morning,” he said.
“The group of three and their loyal dog Minnie were very grateful to the paramedic for his company and compassion staying with them through the night.”
