The Novocastrians went through the championship unbeaten but had to survive a penalty shootout in the final against Illawarra-South Coast when the scores were locked at 1-1 at fulltime.
Newcastle won the shootout 3-2. This was Newcastle's first State title since 2010.
Mudford, a member of the State under 21 team to play in the national championships next month, plays with premier league in Sydney with University of NSW and also with Wests Newcastle in the Hunter Premier League.
Hinton also plays for West Newcastle in the Hunter Premier League. He previously played for Chatham in the Manning competition.
Manning didn't field a team in the men's championships this year.
However, Manning players Conor Smith and Marcelo Castro turned out in division three for New England, with the side going down 3-1 in penalty shoot out in the final.
Eamon Smith was in goals for the Newcastle division two side beaten in the semi-finals.
Ben Ferguson was a member of the Central Coast side beaten by North Sydney in the division one classification match.
Manning's open women's side defeated Goulburn 3-1 in the division two championship playoff for fifth and sixth at Bathurst.
The side opened the campaign with a 7-4 loss against New England before thrashing Nepean (2) 7-0. Lithgow downed Manning 3-2 in the second round before the last match resulted in a 1-1 draw with Lithgow.
