At the end of World War II, internationally renowned cellist Lauri Kennedy and his wife, Australian pianist Dorothy Kennedy, purchased the hotel after settling in Taree.
The couple's sea change brought with them innovative concepts to dining and accommodation.
They were also instrumental in allowing beer to be served five days a week.
"They wanted to bring their new ideas they saw in Hollywood to Taree including making a beer garden, dining rooms and also a rooftop garden," MidCoast Stories' Janine Roberts explained.
The Kennedys left after 18 months, unsatisfied they couldn't bring their dream to life.
Lauri and Dorothy are the grandparents of successful English violinist Nigel Kennedy.
