Larkin and fellow opener Ed Cowan piled on the runs on day one with the pair both posting centuries as NSW finished at 2-402.
NSW won the toss and batted first.
Larkin found the rope 26 times and will return to the middle with Ryan Gibson (16no) today.
Cowan (157) reached his half century before lunch, scoring faster of the opening pair during the morning session.
Larkin was the aggressor in the second session, passing 100 before Cowan, with both Blues reaching a century before the tea break.
