The 27-year-old started his career at Taree’s Manning River Hotel, and climbed up the ranks to his current position as sous chef at Sydney’s sixpenny.
Aaron’s win is the culmination of months of hard work with the finalists announced in April.
Since then he has participated in state, national and finals cook offs, as well as attending a produce tour around the State.
The award was announced this week at a ceremony in Sydney, where Aaron was joined by his partner of 11 years Natasha, and her mother, who travelled from Old Bar for the occasion.
The night before, Aaron cooked in his final dinner for the competition. The night was a time for the young chef finalists to express themselves and their stories from the produce tour.
“I thought the dinner went well, all the feedback from the guests was really positive with many compliments,” Aaron said.
“I was happy with the menu and food that I presented. The dishes that I created turned out as I had planned and the guests enjoyed the dinner experience.”
Aaron’s prize for winning is a two week trip to Italy where he will attend a four day course at ALMA, one of the best culinary schools in Italy and the world. He will also stage in Michelin star restaurants of his choice in Europe.
“I am looking forward to meeting some of the best chefs in Italy and having the opportunity to work in their prestigious restaurants. And of course eating a lot of food.”
Following his win Aaron appeared on Channel 10’s Studio 10 for a cook off against Australian renowned chef Dave Pynt.
Aaron cooked seared king fish, with burnt butter and a salad of watercress, raddish and horse raddish.
The three minute challenge was judged by Ita Buttrose and Richard Reid.
“That’s heavenly,” Richard commented when tasting Aaron’s meal.
Continuing his winning streak, Aaron was crowned winner of the cook off for finishing his meal in time.
Aaron would like to thank all of his family, friends and people back home for all the support he received during the competition.
“It has been overwhelming,” he added.
“Thank you to all the people involved in the Appetite for Excellence program, all the sponsors and the organisers of the event, they work tirelessly to help get the best out of us.
“And to the other guys in the competition - I can’t wait to see what they do with the rest of their successful careers.”
