Blencowe, formerly of Taree, now lives in the Camden Haven area but still runs fitness classes in Taree. She was the Manning River Times Sportstar of the Year for 2013 after winning the world Women's International light welterweight and the World Boxing Federation female welterweight championships in just her third professional fight. She has since had to relinquish the belts.
The 32-year-old is just back from America where she scored the biggest win over her mixed martial arts (MMA) career when she stopped Adrienna Jenkins in the first round.
Blencowe signed an 18 month contract with the American-based Bellator MMA group. She has 12 months remaining and hopes to do plenty more fighting in that time.
She has been described as one of the 'most powerful featherweight prospects,' in MMA. She fights as a featherweight (65.8kgs) in the MMA and a welterweight (66.7kgs) as a boxer.
In all she's had 10 MMX and six boxing bouts in the past two years.
"It's been pretty full-on,'' Blencowe said.
She has separate boxing and MMA coaches and said mixing the two isn't causing any problems. Her boxing career has been in a hiatus while she's concentrated on MMA while she's also been hindered by the lack of offers for fights.
"I'm supposed to fight in Sydney on July 4 for the world welterweight title against an Argentinean,'' she said.
However, that could be put on hold as Bellator hopes to secure her another fight in America.
"That'll be against the world number one,'' she said.
Blencowe is no stranger to world travel. However, she admits she was still struggling with the lingering affects of jet lag when she hopped into the ring against Jenkins in California. Not that it showed as she made quick work of her opponent.
And sight seeing wasn't on the agenda in the quickfire visit.
"I had a bit of time for shopping but that's about all,'' Blencowe said.
"I wanted to come home as soon as I could after the fight. I was missing my kids - I was ringing them at 4am over there because it was 8pm here.''
There's no world champion in her Bellator group.
"There's still a few girls who have yet to make their debut,'' she said.
However, a win or even a strong showing should the fight against the world No 1 come off will be a great fillip for her career.
She's already getting more exposure.
"My fight was streamed throughout the world,'' she said, adding that this is a massive boost when it comes to attracting sponsors.
Blencowe has some thoughts about calling time on her fighting career at 35.
"There are still females fighting at 39, although I don't know if I want to go that long,'' she said.
"At this stage I haven't had to have any surgery or had any serious injuries from my fights so that's been good. I'll just see what happens.
"I'll know when it's time (to retire).''
