A 168-run partnership for the second wicket between Quiney (111) and Marcus Stoinis (71) helped Victoria reach 3-195 in reply to Queensland's 207.
The Vics lost Test opener Chris Rogers for just six off the bowling of Mark Steketee, but Quiney and Stoinis dominated the bowling on a slow deck, only to both fall just before tea.
Earlier, Queensland added just one to their overnight total to be all out for 207. Victorian leg-spinner Fawad Ahmed finished with 5-50 off 27 overs.
The match could have a crucial bearing on the ladder, with the winner likely to move into second spot, dependent on the result between ladder leaders NSW and Western Australia.
Tasmania will push for outright victory in their shield clash with South Australia, the Tigers taking a handy lead into day four.
At stumps on the penultimate day at Gliderol Stadium they were 3-131 in their second innings, a lead of 198. Beau Webster was 46 not out and skipper Alex Doolan had registered 36.
